Yogurt Pesto Dip

This good and good-for-you dip is a delicious accompaniment to veggie sticks, crackers and rolled-up slices of lean meats like turkey and ham. It’s simple to create, but to make it even easier, you can substitute 2 tablespoons of prepared pesto for all but the yogurt, salt and pepper.  

Ingredients: 

1 c. basil leaves
1 c. grated Parmesan cheese
1 tsp. pine nuts
1 small clove garlic
2 Tbsp. olive oil
1 c. plain yogurt, ideally nonfat or low-fat
Salt and pepper

Directions:

In the bowl of a food processor, combine basil, cheese, pine nuts, garlic and olive oil and pulse to finely chop. Add yogurt and pulse to purée. Add salt and pepper to taste.

Makes 4 (-cup) servings.

Nutritional information per serving: 126 calories; 9 g total fat; 6.2 g protein; 5.4 g carbohydrates; 6.7 mg cholesterol; 144 mg sodium; 0.1 g dietary fiber.
