Roasted Garlic & Sundried Tomato Dip

Sweet roasted garlic, zesty sundried tomatoes and tangy feta make this one party dip you can feel good about eating; the Greek yogurt is a great low-fat substitute to heavy sour cream.

Ingredients:

1 head garlic
1 tsp. extra-virgin olive oil
8 sun dried tomatoes, roughly chopped (use a jar packed with oil)
3 oz. feta cheese, cubed
1 c. plain greek yogurt
½ tsp. salt
¼ tsp. pepper
2 tbsp. scallions, chopped

Directions:

Preheat oven to 425 degrees. Place garlic head in aluminum foil. Drizzle with oil and wrap. Roast for 1 hour.
Remove skins from garlic and add to a food processor.
Add the next five ingredients through pepper. Pulse until smooth.
Add dip to a small bowl, garnish with scallions.

Makes 6-8 servings
